Simple Pinto Beans
- dried pinto beans
- chillies
- paprika
- cumin
- chicken stock
Soak the beans overnight, drain and add chopped onions, salt, paprika, cumin, fresh chilli and chicken stock. Boil for 20 minutes then turn the heat down and continue to cook on a low hear for 2 hours. Once the
beans are soft serve with brown rice, chopped tomatoes, avocado and fresh coriander.
