- Finely chop a whole swede and place in a pan to boil. Once cooked, place to one side and leave to cool.
- Beat together eggs and sugar until they from a stiff mouse. Add the cooked and cooled swede into the egg mixture followed by rice flour, baking powder, a pinch of salt some lemon rind and tiny heads of lavender. Mix well and put in a tin to bake.
- Once cooked and cooled drizzle a syrup of lemon, honey and lavender over the top.
