Cornmeal Porridge

  • 1 cup of fine yellow cornmeal
  • 3 cups of water
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cinnamon
  • 3 tablespoons of condensed milk
  • 1 teaspoon vanilla extract

Mix the cornmeal in 1 cup of water. Place the remaining water and milk in a pan and bring to the boil. Once boiling stir in the cornmeal and water mix. Add a little salt. Cook for 15 minutes on a low heat before adding nutmeg, cinnamon and vanilla. Sweeten with condensed milk. Serve hot from the pan.
