Make a simple soup with chopped onions, roasted chicken pieces and vegetable stock. Once the stock is simmering nicely add a handful of barley and continue to cook on a low heat. Once the stock has reduced add a can of tinned tomatoes, a teaspoon of smoked paprika and a good chunk of freshly grated ginger. Once the barley is tender the soup is ready to serve. Eat garnished with a squeeze of lemon juice and chopped spring onions.
